Léno Dolce Sole is an orange wine produced by La Graine Sauvage, the domaine of Italian oenologist Sybil Baldassarre, established in 2015. Named after her son Leno, this natural wine is a blend of Roussanne, Marsanne, and Vermentino grapes. It presents a slightly cloudy gold hue, offering aromas of herbal notes, citrus peel, brown spices, pear, and quince. On the palate, it showcases ripe white and yellow fruits complemented by brisk acidity, spice, and mineral undertones, resulting in a dense, intense, and well-structured profile with a firm acidic finish. Serve slightly chilled at 12–14°C to fully appreciate its aromatic nuances and structured palate. Léno Dolce Sole pairs excellently with full-flavored cheeses, white meats, fish stews, or can be enjoyed contemplatively on its own.

Terroir

The vineyards are situated at an elevation of 450 meters atop a hill in the Parc du Haut Languedoc, near the village of Cabrerolles in the Faugères appellation. The soils are predominantly ancient schist, facilitating deep root penetration and imparting a distinct minerality to the wines. The southeast exposure ensures ample sunlight, while the surrounding woodland and garrigue contribute to a unique microclimate that enhances the aromatic complexity of the grapes.

Winemaking Process

Sybil Baldassarre adheres to organic and biodynamic principles, employing manual vineyard practices to maintain the health and balance of the ecosystem. The grapes for Léno Dolce Sole are hand-harvested and undergo a one-week maceration on the skins, a technique that extracts color, tannins, and aromatic compounds, giving the wine its characteristic orange hue and complex flavor profile. Fermentation occurs spontaneously with indigenous yeasts, and the wine is aged in neutral vessels to preserve its fresh and varietal character. No oenological additives or sulfites are used during vinification, resulting in a pure and authentic expression of the terroir.
