Terroir

The vineyards are situated at an elevation of 450 meters atop a hill in the Parc du Haut Languedoc, near the village of Cabrerolles in the Faugères appellation. The soils are predominantly ancient schist, which facilitates deep root penetration and imparts a distinct minerality to the wines. The southeast exposure ensures ample sunlight, while the surrounding woodland and garrigue contribute to a unique microclimate that enhances the aromatic complexity of the grapes.

Winemaking Process

Sybil Baldassarre adheres to organic and biodynamic principles, employing manual vineyard practices to maintain the health and balance of the ecosystem. The Vermentino grapes are hand-harvested and undergo direct pressing of whole clusters. Fermentation occurs spontaneously with indigenous yeasts, and the wine is aged in neutral vessels to preserve its fresh and varietal character. No oenological additives or sulfites are used during vinification, resulting in a pure and authentic expression of the terroir.
